A beautiful thing about being a baker is being able to take an everyday dessert into our own. Sometimes it works out and sometimes it does not work. It all depends on what we do to compensate the changes that we make.

I had made a tiramisu for a house party this past week. If you are familiar with how the weather in the state of California then you are aware that our weather gets hot this time of year. Now a classic tiramisu is creamy and coffee with a hint of booze. The cream is a mascarpone cream made with mascarpone cheese, eggs and sugar. There is a sponge of some sort, typically lady fingers added which carries the coffee syrup and booze flavor; typically brandy or rum. Now with using this knowledge I had been able to still honor the spirit of the dessert while creating something summer themed.

I had created a blueberry tiramisu. It had a blueberry mascarpone cream, with lady fingers that were soaked limoncello syrup. It still had a creamy texture with complementary flavor of blueberries and lemon.
