Specialty Bakers

We've all heard about specialty bakeries, right? You know, the ones that focus on cakes, cookies, bread, French pastries, Asian treats, or even gluten-free goodies. But have you ever come across a bakery that uses one main ingredient in everything they make?

I hit up the farmers market and walked by a few stalls doing their thing. There was this lady with a cottage food bakery where everything had dates in it. She had cakes, cookies, and these awesome stuffed dates.

There was another stall where everything was all about peaches. They had cinnamon rolls (which were basically like a brioche rolled up with peaches and cinnamon, topped with frosting and more peaches—still super tasty), cakes, and lemonade.

These bakers have got me wondering how they came up with this idea and how far they're planning to take it. As someone who's been professionally trained and has experience in traditional bakeries, I find it hard to see how they can keep this up long-term. It looks like they'll be tied to farmers' markets and food fairs just to make it work, and if they miss an event, they won't earn anything. But let's be real, we don't bake just for the money. We bake because it's our passion.
